Top of the Sunday to you! This week was busy but a definite highlight was Charlotte Druckman’s piece on Sandwiches of History in The Wall Street Journal. Not to mention, something I never thought would happen in a million years, getting a hedcut! Woot!

Before get tuck into this week’s sandwich just a heads up that I will be “on vacation” for two weeks starting on Wednesday, August 7th. But fret not! I have lined up guest hosts so that you won’t go a day without sandwich action. Some will look familiar from last year, some won’t. Sure, between the filling and the green chutney there were about a million ingredients in this sandwich, and cheese. But the flavor, as with Indian street food and street food in general, was off the charts. Ginger, onion, peppers, spices, and melty cheese thanks to the Toas-tite based grilled cheese treatment. No notes, I dug it immensely.

Another frankfurter sandwich? What gives man? Just me trying to use ingredients and cut back on food waste. Hey, at least this was a week after the other one, right? Ground up frankfurter and dill pickle was fine. But it needed plussing up. And for me that meant nutty Swiss cheese and a little toastin’. Seemed to do the trick nicely

This one was pretty straightforward. Asparagus, pimiento, celery, and mayonnaise. Still it tasted pretty ok on it’s own. Plussing it up with the Dabeli Masala (recipe linked above) absolutely kicked it up a notch.

Sweet and Savory Sardine Sandwich

Man, I do like being pleasantly surprised. This sandwich, which was submitted by a commenter on YouTube, sounded at best weird. But that weirdness still tracked with it being an actual grandpa sandwich. While I knew the existence of sardines in maple syrup, I was highly skeptical of this one. Blown away. So tasty. Everything just worked. Before you judge I recommend you try it for yourself. Here’s the recipe as relayed to me:
The best I can tell you is that historically it was eaten in Southern Maine (York, maybe?) in the late-40's early-50's. The way my grandpa used to make it was to sautee the sardines in a tablespoon of butter and a tablespoon of maple syrup until it was reduced to a sauce. He'd put the sardines and sauce on soft italian bread(sometimes toasts) with mayo, thinly sliced white onion, and dill pickle or capers. The fatty-salty-sour-sweet combo is killer.

I was genuinely surprised by how many folks were put of that made a domino with six dots and not two to match the name. Nevertheless, this was an adorable if not tasty little novelty sandwich. Plussed up with just a bit of nut butter carefully placed as to not ruin the domino pips effect. Not terribly filling though lol

Gotta give it to Aunt Babette, very on the nose with the name here. Still, use of mustard and two kinds of bread definitely made this better than other cheese sandwiches of the day. You just know I had to add pickle and give it the grilled cheese treatment to plus it up, right?

White Fish with Tabasco Flavored Sauce (1960)

As fish sandwiches go, this was pretty tasty. Mayonnaise, tomato sauce, and Tabasco? Yeah, I’m in. Someone commented that tomato sauce should have been ketchup since the recipe was British. Either way, it still would’ve been tasty. Took a cue from Cajun and/or Italian cuisine for the plus up. Although a lot of other herbs wouldve’ worked too.

Ludicrous Potato Chips
The good folks at Ludicrous Snacks sent me some chips and they got the same treatment any chip company would get. I try em on camera and if the results aren’t good, it doesn’t make it to air, as they say. I figure they went to the trouble and expense to send me chips, the least I can do is not trash them publicly. I do send constructive criticism back though. Well, in this instance I was instantly into these chips. Think All Dressed but with a savory back note. I do wish they were a but thicker thus the lack of 5 stars.
