That's right, time for the weekly recap
With Sandwiches of History: LIVE! shows and glamping behind me, it’s back to regular posting of sandwich and potato chip reviews. Well, kinda. I have a pretty sizable backlog of potato chips so this past week I put the pedal to the metal and reviewed three flavors in each video. Yep, nine different flavors in one week. Not sure that was the healthiest move but as the kids say, ride the lightening! Ok, let’s do this thing.

It seems with recipes from the 1920s, if cheese in the name it’s going to go one of two ways. Either cheddar cheese or cottage cheese. I actually enjoy cottage cheese but think this one might’ve been better off with cheddar. Plussed it up with the warm spices in curry powder and little freshy fresh lettuce. Solid plus ups but not enough to make me want to make it again.
Should you make it? No

Ham and Tuna Sandwich (1958)

Plus up: Mayonnaise, a smidge of black pepper, top piece of toast

I’m not sure what made the authors of The Modern Family Cook Book think, “You know what would be great with ham? Tuna!” Don’t get me wrong, they didn’t clash but it also wasn’t a magical pairing. Plus it was drrrrrrrrrrry. Plussed it up with things that should’ve been in the sandwich in the first place. Ended up ok but didn’t start ok.
Should you make it? Maybe the plussed up version if you’re bored?

I first saw this recipe mentioned in a Short that Max Miller posted on his Tasting History channel. I pinged him to get more details and ask if he’d be cook with me doing the sandwich. Well, shout out to Max as that turned into a fun collab! Max and I had chatted a couple years back about doing something but our schedules never lined up. Well, this time they did and for a tasty sandwich no less. Yes, I’d prefer dark chocolate to milk in this but it was still quite nice. Plussed it up with cinnamon and nutmeg for a more holiday feel.
Should you make this? Yeah, it’s a nice little treat.

Egg and Smoked Salmon Sandwich (1920)

This was a fussy little number. But, the resulting sandwich was tasty. And honestly, if it was a full sized sandwich it might’ve been a little much. It called for anchovy paste but didn’t give an amount which meant I was in driver’s seat for once. That hint of salt worked well with the mayonnaise, smoked salmon, and egg yolk enriched butter. Plus, it called for toasted bread. I did want just a touch of brightness so I plussed it up with some lemon juice. Fresh dill would’ve been great too.
Should you make this? I mean, it’s a bit of a process but it was tasty.

This was another in a long line of “did they really need to write a recipe for that?” sandwiches. I mean, peanut butter banana? Lots of ways to plus this up. My first thought was to add Mexican chocolate which is a sweetened chocolate that also has cinnamon in it. Then I got inspired by the legend of Elvis (the sandwich he loved that everyone thinks had bacon it, did not) and gave the already plussed up version the Grilled Cheese Treatment™ with bacon grease. Yeah, that was tasty lol

This was a very interesting and tasty tuna salad sandwich. One that doesn’t use mayonnaise. But between the mustard, capers, and lemon juice there was a ton of flavor there. I did plus it up with a little mayo and a salted potato chip for some texture but still, the original was quite nice.
Should you make it? Yeah, why not?

Røgede Muslinger Sandwich (Demark/Norway 1959)

This whole thing was a hot mess. From me misreading the name to not knowing which style of French dressing to use, it was not my finest hour. Still, smoked mussels are tasty and the one that used the old French dressing recipe (akin to to a vinaigrette) was tasty. But, the one with the remoulade style worked the best (even if it wasn’t a real version of French dressing). A little black pepper was nice nice.

In The Chips with Barry 🥔
As I mentioned up top, I’ve got a backlog of chips so I decided to do three reviews in one for each video. It was a lot but no regrets.
Route 11
- Salt & Vinegar potato chips
- Sour Cream & Chive potato chips
- Barbecue potato chips
Route 11 is a solid potato chip maker. They used good tatsing potatoes and their flavors are usually pretty dang solid (my fave by them is the oddly named Mama Zuma’s Revenge which is habanero flavored).
Norse Roots
- Salt & Pepper potato chips
- Cheddar Sour Cream potato chips
- Rosemary Steak potato chips
Norse Roots is the first company that I’ve seen who both cooks their potatoes in beef tallow and is rolling out flavored chips. Don’t get me wrong, I am not against seed oils. But the flavor of potatoes cooked in beef tallow is fantastic (duck fat is also amazing). I gotta say, these chips did not disappoint
H-E-B
- Pepper Jelly & Cream Cheese potato chips
- Post Oak Smoked Gouda potato chips
- Cheeseburger potato chips
You will not convince me that there is another store brand of potato chips that is anywhere near as adventurous or tasty as H-E-B out of Texas (and as I learened this week, Mexico!) Even if they try flavors they shouldn’t (looking at you, Blueberry Lemonade), they go for it and and some pretty great wins along the way.
Can It Sandwich?
As you might imagine, the Can It Sandwich? from last week was bonkers.
