And we are back with a full compliment of sandwich and potato chips recap (though the In The Chips with Barry part is a little off this week, you’ll see why). Paying subscribers this week were….I want to say…treated (?) to a Beef Tea video. I don’t recommend it.

Avocado is not a strong flavor. Almond butter, which is somewhat more pronounced, is also not a strong flavor in my opinion. Putting them together between pumpernickel bread ala Kevin Bacon didn’t really add up to much. The chili crisp plus up brought some heat and much need complexity.

I’m guessing the capers are what inspired the author to name this the French Sandwich. It was a bare bones, if not tasty, chicken salad. Plussed up fresh style with some pepper arugula and a seasoned slice of tomato. Helped to round things out a bit.

To be honest, I am not sure why this recipe was developed. Especially when there are recipes for a fried oyster sandwich in a lot of cookbooks at the time. Maybes it’s because oysters were so plentiful. At any rate, the original was oyster-y, rich and eggy. So I plussed it up with the vinegary bite of Tabasco to cut through. Good enough but not worth revisiting.

Roast Beef Sandwich (1910)

Yet another in a long line of chopped meat sandwiches from the early 1900s. The beef worked well with the ketchup and Worcestershire sauce. But really perked up with both the caraway seeds and hot giardiniera. Yes, horseradish would’ve been great on here too but I felt like I had done that already. A little cheddar would’ve also been nice.

Many folks pointed out that there is an Italian dish that uses spaghetti, sardines, bread crumbs, and raisins. This, was not that. The sandwich filling would’ve be ok on it’s own (though a bit bland) but it absolutely did not work with the raisin bread here.

I usually think of what I want to plus a sandwich up with when I read the recipe. For some reason it didn’t hit me until after I had tasted to sandwich. So, I did my first ever (and hopefully last) hypothetical plus up - fresh dill. Some folks wanted me to use dried dill as a fall back and I would say that’s a solid move were I to let it sit overnight before making the sandwich. Still, dried ain’t fresh and the difference is big enough that I just left it off entirely.

This one was very similar to others I’ve made in the past from old recipes save for the amount of interesting flavor and the richness of the raw egg yolk. I actually kind of enjoy the pickled beets when mixed in among all of the other toppings (who even am I right now?!). Plussed it up another strong flavor, blue cheese. Made it even tastier.

In The Chips with Barry 🥔
This week was Justin week as he is the kind gentleman who sent in all the chips. Normally, I copy and paste links from YouTube for you to see right here. Well, this week I decided to post all the reviews (but not Can It Sandwich?) as Shorts just to see if had an effect on views/engagrment. And boy, did it ever…and not in a good way. So next week, back to normal. But this weeks is going to be a bit odd, sorry.
