Big Sandwich Action
Ok, regular sandwich action.
This past week saw me try a new intro and some different camera stuff. Some of you enjoyed the new intro some preferred the old. I’ll likely still play around with it but definitely going to keep the “Welcome to Sandwiches of History” in there somewhere. My goal was to see if I could keep folks from dropping of after the firs couple seconds (that’s what the data shows). Well, didn’t stick the landing on that lol. Oh well.
With Thanksgiving in the rear view, it’s time to look toward the end o’ year recap videos:

Proving that not all 1,001 sandwich recipes in this book represent The Great Depression, we have the Caviar Sandwich. Very light, briny, and tasty…and expensive. And I used American wild sturgeon caviar. The Russian stuff is bonkers expensive. Some folks weighed with the idea of creme fraiche or sour cream as plus ups, both of which would be tasty although the lemon juice in the recipe was bringing the tang. I opted to plus it up with the slight oniony flavor of chives.
Should you make it? If you feel like spending the $$$

Potato Grilled Cheese Sandwich (recent history)

Plus up: Dunk it in turkey gravy

Big carb on carb action with this one. The potato crust on the outside was tasty (Chef Tyler told me that I needed a bit more oil to get a full crust) if not filling. And I liked the combo of cheddar and mozzarella. But the big eye-opener was using Kewpie mayo, salt, and pepper on the inside. Yum! Plussed it up by dunking in some turkey gravy, naturally.
Should you make it? Yes, yes you should

Nothing like raw egg in a sandwich, ammi right? Lol This was an unfortunate waste of ham. Way too much vinegar added to the awfulness. Some folks thought that “beaten egg” = “scrambled egg” but I looked into it and that was not the case around 1900. Some also speculated that the egg and the vinegar were to emulsified. Nope, recipe simply said to mix and put onto bread. Still others thought it was clearly meant to be cooked (but apparently didn’t watch the post picture video where I did just that…and it looked dreadful). I will say, though, it is heartening how many folks really want give the authors a chance on some of these recipes.

Hot Corned Beef Barbecue (1960s)

I’ve done a few recipes like this where it calls for you to make a quick barbecue-esque sauce. But this is the first I’ve seen made with canned corned beef. I have a fondness for canned corned beef because I ate it growing up. But, usually it had a nice crust on it. Which I think would’ve greatly improved this sandwich as the texture wasn’t the greatest. Plussed it up McRib style (and really just BBQ style) with some dill pickles and slice white onions which was nice.
Should you make this? Maybe if you hard sear the beef first.

Recipe Revisit/Recipe Remix™ Bologna, Ketchup, and Potato Chips Sandwich

Often times folks will suggest I plus up a sandwich by treating an ingredient differently. The only problem is that, almost always, that would have to be done pre-assembly which means I wouldn’t be following the recipe. Well, in this case, the calls to fry the bologna got me thinking, “yeah, why not fry up the ketchup coated bologna?” So I did and it was tasty. But with a Recipe Remix™, I can do anything I want as long as I maintain the core idea of the sandwich. So I fried up the bologna separately, mixed Calabrian chili paste into the ketchup, melted some provolone cheese on the top piece of bologna, and used pesto flavored potato chips. Sooooo goood!
Should you make this? Yes, especially the Remix version

Grandma’s Weird Chicken Sandwich

Plus up: Melted, smoked cheddar cheese
Plussed up rating: 7.5
I guess when viewed through the lens of a kid, this may have seemed like a weird sandwich. While it wasn’t a combo of flavors I had ever seen, it sound pretty dang good. And it was. The green onion and the Old Bay played particularly well with the chicken. Melting a little smokey cheddar cheese just made it that much better.

Safari Sandwich (South Africa)
International Sandwich Sunday

Not gonna lie, this sandwich, on paper, sounded pretty good. But getting some color on the ham and pineapple combined with the chutney mayonnaise and avocado madre for one delicious sandwich. So much so that I didn’t feel compelled to plus it up. Go figure.

In The Chips with Barry 🥔
Svenska LantChips Paprika Potato Chips
Have to admit, my go-to when flavored grabbing chips is never paprika. But these, these were really well done. So much so that if I see them in a store I might just grab ‘em.
President’s Choice Potato Chips
This is yet another example of a store brand that punches well above it’s weigh in the flavor department. This had all the warm spices and slight coconut sweetness you’d expect from a Korma flavored chip plus a mild kick of heat.
O’Donnells of Tipperary Fire Roasted Buffalo Wing Potato Chips
Unlike the very tasty Ballymaloe Relish and Cheddar potato chips from the same brand, these were a little lacking. Tasty but didn’t really pay it all off.
Can It Sandwich?
The one wherein the O’Donnell chips actually improved due to the butter in the sandwich. Woot!
