Yeah, I mean, how bad was a grilled ham and cheese going to be? The cheese I used in place of the Mantecoso was Port Salut. A buttery cheese that melts so nicely. That combined with ham and toasty, buttery bread was just wonderful. To plus up it up I went full breakfast sandwich mode with an egg (that was supposed to be over easy lol) and a green jalapeño paste. You’ll notice I haven’t linked the jalapeño paste. That’s because I bought it on a whim at Filippi’s Pizza in San Diego. Filippi’s was founded as a deli back in 1950 and their first location on India Street still has the deli in addition to the much bigger restaurant. The paste is from Peru and I have yet to find a source online for it. Go figure.

Interestingly enough, there are not a ton of sandwich recipes with the name Christmas in them. So I was a little stoked to find this one over at archive.org. I have to say, cheese and mayonnaise broiled atop a cube steak with onion, tomato, and green bell pepper sounded a lot better on paper. In reality it was just kind of there. By plussing it up with a little pico de gallo, I got some citrus, cilantro, and jalapeño in there to liven things up. Still, I wouldn’t make this one again.
