Sandwiches of the week
Hmm, that headline makes it sound like their ranked, sorry. No

Welcome back to the weekly recap of Sandwiches of History. Substack has been telling me that my posts are too long for email. So this week, I am trying a new format to alleviate that. Please let me know what you think via the poll at the bottom. Thanks!

Salmon Butter & Asparagus Sandwich (Denmark, 1962)
International Sandwich Sunday
Original rating: 2
Plus up: Remove the canned asparagus and add capers
Plussed up rating: 7 1/2
I heard from a lot of folks that actually like canned asparagus which, quite frankly surprised me but good for them. I also hear from a lot of folks opining that it would white asparagus. I’ve only seen white asparagus in jars and the recipe specified “canned.” That smoked salmon butter was bonkers good though. I say make it by putting in mini food processor rather than that sieved nonsense.

Bologna Benedict (1945)
The Detroit Times
Original rating: 8 1/2
Plus ups: Chopped green onion tops and Franks RedHot Dill Pickle Hot Sauce
Plussed up rating: 9 1/2
This was fun to do. My friend Jim Behyemer, the man behind SandwichTribunal.com and SandwichIdiot, was researching alternate versions of Eggs Benedict when he stumbled upon this wartime version. It uses bologna instead of ham and a béchamel of sorts instead of hollandaise. Still, it was tasty. Adding the green onions and Franks RedHot Dill Pickle Hot Sauce (affiliate link) really perked things up.

Vegas Sandwich (1996)
Military Families Magazine
Original rating: 8 1/2
Plus up: Thai Sweet Chili Sauce
Plussed up rating: 9
This recipe definitely read like it was geared for busy military parents. And let’s face it, military significant other is holding down the fort while the other is deployed, they are doing everything. Which means they are more than busy. This recipe leveraged easy to get ingredients (e.g. condensed cream of mushroom soup, corn flakes) and didn’t involve a tone of prep time. Plus it had tuna! The end result was a comfort food sandwich that had a nice creamy interior and crunchy exterior. The sweet Thai chili sauce worked as well with the cereal on the outside as it did with the tuna and soup on the inside.

Alphagetti Sandwich
Our History
Original rating: 6
Plus up: Grated parmesan cheese and Crushn Red Chili flakes
Plussed up rating: 7 1/2
I had never heard of Alphagetti before the email came in from Margaret on Vancouver Island. When I did a search online to find them, the only site selling ‘em was Canadian. Which led met to think it was a Canada-only product. Apparently not. At any rate it isn’t far off from Spagetti O's in concept. What was great was that the butter really did act like a moisture barrier. So the sandwich wasn’t completely sogged out. It was a fun, somewhat tasty sandwich made more adult buy adding grated parmesan cheese and Crushn Red Chili Flakes (not an affiliate link).

Recipe Revisit: Sandwich Filling (1923)
Woman’s College Cook Book
Plus ups and ratings:
Brie - 6
Red Seedless Grapes - 7
Granny Smith Apple - 7 1/2
Blue Cheese - 8
You spoke, I listened and we revisited Sandwich Filling from 1923. I took the top four most often mentioned and put them through the test. The brie was ok but did bring a lot to the table. The red seedless grapes brought a little more. But it was when we got into contrasting flavors like the tart Granny Smith Apple and the blue cheese where things got interesting. For the blue cheese edged out the apple. A lot folks in the comments called for Granny Smith apple AND blue cheese which I wish I had thought to do. I think that would easily been a nine.

Doughboys (Peanut Butter Sandwiches 1917)
Guest Review Friday
Original rating: Mitch 3 1/3 | Wiger 2
Plus up: Sliced cucumbers and hot honey
Plussed up rating: Mitch 6 | Wiger 6 1/2
It was great to have Guest Host Friday fire up again. And also great to have the lads from Doughboys Podcast do the hosting. If you’re not familiar with their work, among other things they review fast food joints. Unlike Sandwiches of History they can get a bit blue with their humor but clearly they’re great guys. And they did a fantastic job of behaving themselves while guest hosting. I, on the other hand, did not do a great job at guiding them as the peanut butter would definitely have been unsweetened and likely unsalted. Also, the olives were more likely the green variety. Still, while the combo of peanut butter, green olives, and paprika might have been a tad better, it would still be weird.

Beef Sandwich (1917)
Salads & Sandwiches
Original rating:
Plus up: Miss Vickie’s Sour Cream and Caramelized Onion potato chips
Plussed up rating:
Not sure why they didn’t just go ahead and call it a roast beef sandwich. After all it was mainly chopped roast beef with some pimentos and butter thrown in. It was fine although along with buttered bread it was a bit too much butter in my opinion. Plussed it up withs sour cream and caramelized onion potato chips bringing in not only another layer of flavor but crunch as well.
