Well, this is embarrassing. May is a bonkers month for me. I’m traveling for my day job including a stint of 6 consecutive 12 hours days. On top of that I’m recording and posting for both Sandwiches of History and In The Chips with Barry. AND I am going to do two live shows (May 28th in New Orleans and May 31st in Boston). Oh, and we went camping last weekend. Maybe if I cut out sleep….

At any rate, we’ve added SoH: LIVE! shows in Detroit, Dublin, and London. Working on ones for Buffalo, Toronto, Tempe, Denver, and Las Vegas so stay tuned for that. As usual, ticket links and info here. Ok, on to the sandwiches!

We kicked things off last week with one the older sandwich recipes I’ve come across from a cookbook I had yet to use. It was surprisingly not as bare bone as I would’ve guessed given that it was from 1878. In fact, all it needed in the way of a plus up was a little freshness. Sometimes less is more.

This was an amazing recipe in that it managed to call for not one but three olden tymee techniques in one go. Soaking ingredients, pounding in a mortar and pestle, AND pushing through a sieve. Even after all that the result was rather lackluster. Added some acid via lemon juice and fat via mayonnaise to try and drag it out of the desert.

Cheese and Ketchup Sandwich (1942)

Plus up: Grilled Cheese Treatment™ with smoked butter
Plussed up rating: 7 1/2

I’m not a huge fan of ketchup (except as a potato chip flavor) but I don’t hate it. So when I saw the two main ingredients here I was skeptical. But it turned out just fine. But plussing it up with the Grilled Cheese Treatment™ using smoked butter made it a much more complex, flavorful sandwich.

Shoving Cheetos in between slices of toasted bread slathered in peanut butter was in different ways by folks. For one a fun snack, another a stoner’s delight, and some saw it as a struggle meal. Me? I saw it as a fun snack. I like that combo of cheese crackers and peanut butter so this was up my ally. Added a little sweet heat in the form of Chin-su which made it that much better.

Grapefruit and Sardine Sandwich (1931)

If you blinked you might’ve missed this episode. Despite using a Ruby Red grapefruit which is admittedly less bitter than regular grapefruit, this combo of it and sardines is not one that worked for met at all. Some folks asked if the bitterness came from the pith (which stuff on the inside of citrus). While that certainly would’ve added to the bitterness, I used the pulp. And it was till not good.

This recipe felt like an attempt a building a sweet/savory combo. To me it didn’t quite stick the landing though. The mayo and pimento felt a little at odds with the sweet apple. So, I decided to bridge the gap with a little Beau Monde seasoning that did the trick nicely.

Like most international sandwiches, this one from Morocco was a fair amount of work. Still between the fried Ras el Hanout and cliantro seasoned potato patties, the harissa mayonnaise, and the fresh veggies, this sandwich wanted for nothing. Delicious right out of the gate. Plus, leftover potato patties to snack on later in the week!

In The Chips withBarry!

Tantos Cacio e Pepe Puffed Pasta Snacks

I love Cacio e Pepe past and I gotta say, these little snacks these nailed it delivering on the Pecorino Romano, Parmesean Reggiano, AND the black pepper. Way too easy to eat.

President’s Choice Spicy Ketchup Potato Chips

Speaking of easy to eat. Remember how earlier mentioned liking ketchup flavored potato chips? This is one of the reasons. Didn’t just taste like sweet tomatoes. Not it brought the spices and the spiciness.

Taylors Potato Crisps Pickled Onion Potato Chips

My first experience with Taylor was pretty meh. So it was a nice surprised to see them pay off the flavor here. I do wish their potatoes brought a little more to the party but hey, whattta ya gonna do?

Can It Sandwich?

As you can imagine, the Cacio e Pepe snacks, and the Spicy Ketchup potato chips, and the Pickeled Onion potato chips sandwich quite nicely on their own. Together though…not so mucm
