Well, halfway through the current leg of Sandwiches of History: LIVE! and it has been a blast! Great audiences in San Diego, Nashville, Washington D.C., Cleveland, and just yesterday here in Cincinnati (at Jungle Jim’s, no lees!) Today, off to Houston for a show with special guest Chef Michelle Wallace (Top Chef, BBQ Brawl), Dallas with special guest Ken Bethea of the Old 99s, and Atlanta with special guest Amber Nash (Pam of Archer). It should be no surprise that minced ham and egg is a tasty combo. That said, this did need a little something something. I was tempted to add cheese and broil it but as the recipe said to cook the eggs ā€œuntil firmā€ I was a little worried about them getting tough. So I opted for one of favorite plus ups, Calabrian chili paste. But, honestly, there are so many different ways to plus this up.

Plus ups: Adding roast beef to the peanut butter verions
Plussed up rating: 5.5

Talk about sinus clearing sandwich! Still, it was tasty. Glenn, who share the recipe, was adamant that peanut butter, not the roast beef called for in the original recipe, was the superior move. Naturally, I had to try both. And Glenn was absolutely correct. The beef just got kinda bulldozed. Even when added to the peanut butter version, it wasn’t a strong precence.

Potato Salad Sandwich Sandwich (1937)

Plus up: Black peppers and smoked chili flakes
Plussed up rating: 7

Potato salad meets egg salad for a pretty ok sandwich. Plussing it up with some black pepper and smoked chili flakes made it more savory (offsetting the sweet pickles) and added a little depth which made it even more enjoyable.

This was basically a potato salad with cabbage between bread. And it was pretty ok. As some pointed out, cooking the contents would’ve been great. But that will have to wait for a Recipe Remix. Didn’t have fresh dill on hand so I used dried dill weed because dill and potatoes? C’mon!

Our guest host, Jonathan Geller, was fantastic! Funny and fun to watch not to mention a great sport for taking this sandwich that ā€œfeatured" (?) patĆ© de foie gras. The final filling looked like cat food but Jonathan powered through plussing it up with olives that brought texture and a bit of brininess. Well done, sir!

Fried onions, bacon, and egg. I mean, how bad could this have possibly been? The plus up opportunities seemed infinite but for some reason my brain went immediately to the sweet, tamarindy, tangy HP sauce. And it just worked. Unlike my camera for the second half of the video. Lol

This is the kind of recipe I love. The flavor payout is exponential when weighed again how easy it is to make. Garlicky, shrimp with smoked paprika, roasted red bell pepper, faxuaioli (I also have a version of that in Sandwiches of History: The Cookbok) all on a baguette. I needed absolutely nothing else in my opinion.

In The Chips with Barry šŸ„”

Cadina Spicy Potato Chips
Taiwan

This were a sleeper. On the bag it just shows a bunch of chilis and the flavor is just listed as ā€œspicy.ā€ In reality these were very well done arrabiata flavored potato chips. I dug ā€˜em.


Boca Deli Quesi Trix
El Salvador

While these didn’t have a lot of chili, they were cheesy and did taste good. Essentially cheese flavored Cheetos. And I am very ok with that.


Brets Pesto Mozzarella Potato Chips
France

Brets almost always hits it out of the park and these were no exception. A well balance pesto flavor complemented by the every so slight tang that is the hallmark of fresh mozzarella. So good. Highly recommend you grab ā€˜em if you see ā€˜em.


Can It Sandwich?

Yeah, all three absolutely could sandwich but the Brets…oh the Brets. If you do buy the Brets, I highly encourage you to give it a go. And yep, all three together worked really well. I love it when that happens.
