Alrighty, we are back. Still working out the kinks behind the scenes but looks like the translation of the newsletter worked just fine.
Super stoked to head up to Portland at the end of this upcoming week to attend Bill Oakley's Greatest Airline Meals of the 20th Century Dinner. On Friday, February 20th, yours truly will be introducing the sandwich course!
Still finalizing the menu for the two-night Sandwiches of History Dining Event in Paoli, Wisconsin on April 29th and 30th at Seven Acre Dairy Company. More to come on that. And planning is under way for the two-night Sandwiches of History events in Brooklyn in early May to benefit Brooklyn.org. Stay tuned!

On Episode 7 of Their Own Drum, Sam sits down with Barry Enderwick, former Netflix marketing leader and the creator of Sandwiches of History, for a conversation about curiosity and craft. Barry takes us back to the San Diego record store where he learned by hanging around, saying yes, and designing posters late at night on a borrowed computer, then forward to Netflix, back when it was still a scrappy DVD-by-mail idea. Along the way, he breaks down the kind of research-driven thinking that shaped Netflix’s “act like a first-place brand” approach.
And then we get into the internet years: the daily posting routine, the accidental magic of becoming “appointment viewing” for people during the pandemic, and the difference between being positive and being unrealistically upbeat. Barry talks about why his whole thing, sandwiches, chips, ice cream, all of it, works best when it’s just… fun.

This was...not bad? I mean, the bread crumbs were definitely there to bulk things up but other than thad added nothing. Slapped on slice of sweet tomato and seasoned it with J.O. Spice (like Old Bay but a bit more intense). Worthy of finishing but probably not of making again.

This is one of those recipes that you can file under "didn't need to exist." It had the elements of a Club Sandwich to some extent but it wasn't any real improvement. Plussed it up with pepperoncini to a contrasting, acidic punch and a top piece of bread just because. Thoroughly mediocre.

While not bad, it felt like this sandwich tripped in a few places. Not enough bologna and superfluous third slice of bread (superfluous because there wasn't enough bologna) for example. Plussed it up with some creamy, delicious St. Agur blue cheese which was nice. Can't help but think this might end up becoming a Recipe Remix™ soon.

When folks are randomly selected to Guest Host, one of the questions I ask them is, "do you want me to choose a sandwich recipe for you?" Tony, did not. He wanted to do this oddball, goofy sandwich from the get-go. And I say more power to him. And to his credit, not only did he take it seriously, he did two plus ups! Of course, the Nerds one ended up being a minus down but still. Nicely done, Tony. Oh, and go check out his album.

Sometimes the things we love are epically simple. Take this sandwich for example. A single slice, grilled cheese sandwich. Nothing splashy but definitely tasty. Plussed up with slices of dill pickle to provide a nice pop and well else could you ask for? (yeah, ok bacon. Still...)

Yeah this was a lot of work and expense to not have a wow-like outcome. Everything from the mushrooms to the mustard to the steak was tasty. Just that it was kind of there. And I loves me some steak. Plussed up with some cheddar made it a bit better. I do think if the steak were chopped up and mixed in it might be better but not really feeling like revisiting this one.

In The Chips with Barry
I've got such a crazy backlog of chips that I went for it last week. Kicked things off with 3 flavors from Deep River Snacks (sent in by Andrew, thank you!). All three were quite tasty! Huzzah!
The potato chips from Joe's Chips (also sent in by Andrew, thank you!) were less impressive thought not bad by any stretch.
And I wrapped things up with a couple of flavors from Calbee of Japan. The Soy Butter Scallop flavor was good and surprisingly devoid of the generic seafood flavoring often used in chip from Asia. The King Cheese was good but did have that slight sweetness that Japanese chips seem to have.
