One Recap To Rule Some of Them All?
Let me just state unequivocally that I am not running out of olden tymee sandwich recipes. But, the to-do list of "sandwiches of our history" keeps getting longer and longer and longer and longer. So, starting the week of 9/7 I am going to do three sandwiches of our history each week. If you have a sandwich of your history to share, I've create a page on my website to make it easy to do! Fret not, there will still be olden tymee sandwiches and International Sandwich Sunday.
On the cookbook front, we're now entering the phase where we finalize the cover and do the photos. In fact, I'm heading to Santa Barbara for a photo session in just a couple weeks.

As for the cover, I received a second round of design ideas which you can see above. Personally, I love the fourth as it feels light, fun, easy to read, and has my mug on it (I guess they all do, don't they lol). The subtitle is still very much "in progress."
Ok, onto the sandwiches and chips!

Corned Beef Hash and Mustard Sandwich
Heinz Sandwich Recipes (1939)
Rating: 4
Plus up™(s): Pulling it apart and crusting the corned beef hash
Plussed up rating: 5 1/2
For the life of me, I will never understand why some sandwich recipes of old call for one to eat cold corned beef from a can let alone cold corned beef hash from a can. Yet, here we are again. As you might imagine, it was less than ideal. So, I plussed it up by pulling it apart and crusting up the corned beef hash for flavor and texture. Now, that with mustard was tasty.

Ham Piquant
The Sandwich Book (1964)
Rating: 6
Plus up™(s): Melty Swiss cheese
Plussed up rating: 6 1/2
The base sandwich here was pretty alright. Ham and tangy mustard (the horseradish kinda went silent). Plussed it up with nutty goodness of melted Swiss cheese. Gruyere would've been even better but hey, I'm not made of cheese.

Grahamsweet Sandwich
1,001 Sandwiches (1936)
Snack Sandwich Rating: 7
Plus up™(s): Grated orange zest
Plussed up rating: 8
Man, a lot of folks were adamant that this was not a sandwich. For me, it sandwiches an impromptu icing (which set up all on it's own after a few minutes) between graham crackers, it's in a book titled 1,001 Sandwiches, and the name has sandwich in it. So yeah, I'm gonna make it. And it was tasty if not really sweet. Would've eaten two instantly back in my youth. Many comments indicated I should have used chocolate as the plus up. While that would've been tasty for sure, I wanted something bright to cut through all the sweetness and opted for the orange zest with it's intense orange oil.

Ham and Marmalade Sandwich
The Badminton Library Series of Fishing for Salmon or Trout (1887
Rating: 6 1/2
Plus up™(s): Chinese Five Spice
Plussed up rating: 7
It was only while editing that it dawned on me that this would be a sandwich eaten while fishing. D'oh! Oh well, never claimed to be smart lol. Hard to go wrong here. I used a smoky country ham and orange marmalade which, of course, mimics glazed ham a bit. I opted for the complexity and warmth of Chinese five spice but adding ground cloves and cinnamon would be another great, holiday-esque, way to go.

Tomato Sandwich
Recherché Side Dishes (1901)
Tea Sandwich Rating: 5
Plus up™(s): Slice of heirloom tomato and toasted sesame seeds
Plussed up rating: 6
I think even today, in a lot of the United States, finding a decent tomato in winter is nearly impossible. Which is why canned tomatoes and tomato paste were created. In this case the intense, sweet tomato paste was used as a flavorful stand in. It was good and if it was winter in the northeast, it would be a damn fine tomato sandwich. But I wanted a bit more so I plussed it up by adding a seasoned slice of heirloom tomato and some nutty, toasted sesame seeds. Yum.

Lo Della's Sandwich
A Sandwich of Our History
Rating: 7 1/2
Plus up™(s): Maldon Sea Salt
Plussed up rating: 8
This sandwich was deceptively delicious. I mean, two ingredients - apple butter and cream cheese. But the combo of those two got even better with the Grilled Cheese Treatment™ The only thing I could think to plus it up with is a little minerally Maldon Sea Salt. And it really did heighten all the flavors involved.

Kottenbotter (Germany
International Sandwich Sundy
Rating: 7 1/2
Plus up™(s): Limburger cheese
Plussed up rating: 8 1/2
In this sandwich you can see the origins of so many grandpa/grandma sandwiches. Smoky sausage, tangy mustard, and sharp raw onions between bread. I'm a little surprised with myself for not plussing it up with a cold crisp pilsner. Instead, I opted for the "aromatic" Limburger cheese. The cheese that reeks and reeks even more the longer it's ope but which tasty great. Especially with the other ingredients invovled.

In The Chips with Barry
Have to admit, had not heard of let alone tasted Andalouse sauce from Belgium. The description on the back of "ketchup and mayonnaise" completely undersold it. Far more complex and tastier than than. So much so that I am going to make the sauce itself.
"Formed Cheese Tubes" doesn't a great ring to it so O!Tubes it is. Like a lot of savory snacks out of Asia, this one had a noticeable sweetness which I'm kinda not into tbh.
Lay's Ukraine does it again. This time with a wonderfully balance crab flavored potato chips.
Only one way to find out, ammi right?
Aaaaaand scene. That's a wrap on last week. Thanks for watching, subscribing, and especially if you've made it down this far, reading!
Cheers,
Barry
