Welcome back to the weekly recap! We had some ups, some downs (though none in the bin), and even an awesome guest host!

As for me, I am just putting the finishing touches on cookbook number two. This one will have eighty-four adapted recipes. Unlike Sandwiches of History: The Cookbook, I decided to adapt each recipe just a touch further. What's that mean? Well, in the first book, I adapted the recipes by figuring out/adjusting amounts but largely keeping the recipes like they were. For this book, I've leaned into making a lot of them better versions of their old selves. I hope you enjoy it when it comes out next Spring.

With such a great name I had high hopes for this one. But I think I speak for all of us when I say what a letdown. Corned beef hash, canned or homemade, needs to be crisped up for a massive flavor boost. The plus ups of black pepper and pickled red onion helped but not a lot. It was just kinda corned beef hash with tomato and cheese warmed up under the broiler. Meh. A definite candidate for a Recipe Remix™.

Yet another sandwich wherein we're to make a quick sauce that then turns out to be quite tasty. I saw more than a few comments turning their nose up at the use of ketchup. As you know, I'm not big into it but even world renown chefs like Jacque Pépin recognize it's value as an ingredient in dishes. The original of this really did taste like a tuna Sloppy Joe which was good. Honestly wasn't 100% sure if the toasted sesame oil plus up was going to make it good or weird. Turns out, it made it verrrry good.

This was pickle-forward, alright. I do like how they called for some beef to make it a little heartier but yeah, this was all about the pickle. And it was actually pretty tasty. The Hardbite Spicy Jalapeño potato chips brough not only a kick of heat and grassy jalapeño flavor but potato flavor and texture as well.

Finally, a sandwich that features peas AND had a rhyming name! The original wasn't bad save for the lack of seasoning. On the positive side, so many possible plus ups like mint, black pepper, even hot honey. As for me, I went with fresh ground nutmeg for my plus up. I think it's my default setting when I hear Swiss cheese. Lol

This sandwich was tasty. Smokey ham, hatch chilis, sauerkraut, a spicy burger sauce, the Grilled Cheese Treament™...it was a fully formed sandwich as-is. No plus up required. When I make it again (and that will happen) I will leave the ham as slices instead of chopping it up. But that's the only modification I'll make

A very different but understandable take on the French Pain Thon. Thon, of course, means tuna. But off the coast of Senegal, sardines are abundant and more affordable than tuna. So, this tuna sandwich is made with sardines. I will say that if you have aversion to sardines, this is not for you as it was the dominant flavor. But not the only flavor. Overall a tasty sandwich made just a smidge better with the spicy Indonesian Sambal Oelek.


In The Chips with Barry

I'm not usually a fan of flavors like "spicy green chili" since there are so many green chilis out there. Still, these did a great job of combing a hatch-like flavor with jalapeño flavor and heat.

Fun little bacon flavored corn snacks. Not gonna blow your mind but kind of fun to eat nonetheless.

These were good but subtle when compared to other Thai Sweet Chili potato chips I've tried. Not bad though. Not bad at all.
